When I receive the form I would like the "From:myemail@gmail.com" to change to another email address.

How do I do that?

The From: on the auto responder is configurable under Edit > Auto Responder. The From: for the actual form message sent to you will be the same as whatever the sender of the form inputs into the e-mail address field.
