after the form is submitted and the email received, the area where i would see the submitted data is blank. Also, if i mark the field as 'required' i get an error message saying i left the field blank (even though of course i have typed in some test data in the text box).

What gives?

There is most likely a problem with the HTML on the site. Login to your account and delete the questions that you are having issues with (Edit > Form Questions > Delete). Once they are deleted, add replacement questions from the same edit area. After your have deleted and then replaced the questions, go to 'Get HTML' and update your website with the new code.
